RECIPE: Udon Noodle Salad with Sesame Dressing

This simple salad is a celebration of mottainai, the Japanese spirit of never letting good food go to waste. Colorful and chewy udon noodles provide the base for any left-overs you may have in your fridge, while a drizzle of sesame dressing adds the perfect hint of nutty aroma and flavor.


Servings: 2

Ingredients:

  • 1 package 5 Grain Udon Noodles

  • 2 large lettuce leaves

  • ½ - 1 cucumber (juliened)

  • 4 cherry tomatoes

  • Shredded cooked chicken 

  • Other toppings as desired (ie ham, tuna, tofu, boiled eggs, steamed vegetables or any other leftovers you may have in your fridge)

  • Pinch of white sesame seeds (optional)


For the dressing:



Instructions:

1. Heat the udon noodles in boiling water, drain into a colander, chill thoroughly in ice water, and drain well.

2. Separately, make the dressing by mixing all the ingredients in a small bowl. 

3. Arrange the udon on a plate and top with lettuce, cucumber, tomatoes, chicken, and any other toppings.

4. Pour over the dressing from step 2, sprinkle with additional white sesame seeds if desired, and serve.
