My mother loves potatoes and she loves them in miso soup. She made this at least once a week when we were kids and I still love them till this day.
- Combine water, dashi pack and miso in a saucepan and simmer over medium heat for 3 mins.
- Take out the dashi pack. Add in julienned potatoes and cook over medium heat covered for 3 mins or until tender.
- Transfer to individual bowls. Top with chopped green onions and serve immediately.
