Kyoto's most popular omiyage (souvenir), yatsuhashi are a type of cookie made from a combination of rice flour and sugar flavored with cinnamon. There yatsuhashi cookies also feature kinako (roasted soybean powder), which adds a sweet nutty flavor similar to peanut butter. To make the cookies the dough is rolled into an elegantly curved rectangle and baked until crips, giving the cookies their signature shape resembling a Japanese koto (harp).
