RECIPE: Simple Okara (Soybean Pulp) Gazpacho

In this easy-to-make okara gazpacho, the savory sweetness of tomato juice is elevated by a touch of sugar or honey. The okara gives the soup a luxurious texture while keeping the dish light and refreshing.


Servings: 2-4 servings


Ingredients:

  • 320ml (~1⅓ cups) tomato juice (without salt)
  • 1 packet Gourmet Okara (Soybean Pulp)
  • 1.5 Tbsp sugar (or 1 Tbsp honey)
  • 1 tsp Shiitake Mushroom Broth Tea
  • A pinch of black pepper
  • 3 shiso leaves (or basil leaves) (julienned) (garnish)

Instructions:

  1. In a bowl, combine tomato juice, gourmet okara, honey, and shiitake mushroom broth tea.
  2. Pour into a serving dish and garnish with julienned shiso or basil and black pepper.
