RECIPE: Simple Okara (Soybean Pulp) Gazpacho
In this easy-to-make okara gazpacho, the savory sweetness of tomato juice is elevated by a touch of sugar or honey. The okara gives the soup a luxurious texture while keeping the dish light and refreshing.
Servings: 2-4 servings
Ingredients:
- 320ml (~1⅓ cups) tomato juice (without salt)
- 1 packet Gourmet Okara (Soybean Pulp)
- 1.5 Tbsp sugar (or 1 Tbsp honey)
- 1 tsp Shiitake Mushroom Broth Tea
- A pinch of black pepper
- 3 shiso leaves (or basil leaves) (julienned) (garnish)
Instructions:
- In a bowl, combine tomato juice, gourmet okara, honey, and shiitake mushroom broth tea.
- Pour into a serving dish and garnish with julienned shiso or basil and black pepper.
