Salt mikan marinade adds the perfect mellow acidity and citrus flavor to fresh cod.
- 2 servings cod
- 2 Tbsp salt mikan marinade*
- 2 Tbsp flour
- 2 tsp olive oil
- 10g (~2 tsp) butter
- Pinch of black pepper
- Cover the cod with the salt mikan marinade and marinate in the fridge for about an hour. Wipe with paper towel to remove excess water then sprinkle with flour.
- Heat the olive oil and butter in a frying pan over medium heat then add the marinated cod skin side down. Once cooked, turn the heat to low, flip the cod and cover the pan with a lid. Cook for one more minute. Serve topped with a pinch of black pepper.
