RECIPE: Quick and Easy Miso Egg Sandwich
Yogurt adds a touch of tang while spicy chili shiitake miso gives the old favorite egg sandwich an exciting kick of umami and spice.
Servings: 3
Ingredients:
- 6 eggs
- 50ml water
- ¼ onion (chopped)
- 7 Tbsp mayonnaise
- 3 Tbsp plain unsweetened yogurt
- 1 ½ Tbsp spicy chili shiitake miso* (or any other miso*)
- 4 pinches of salt and pepper
- 6 slices of white sandwich bread
Instructions:
- Crack the eggs into a microwave-safe container and add water. Whisk to combine the egg yolks and whites. Cover with plastic wrap and microwave for ~4 mins at 600W. Then finely mash the cooked eggs with a masher or fork.
- Add chopped onions, mayonnaise, yogurt, and spicy chili shiitake miso. Mix to combine and season with salt and pepper, adjusting to taste. Cover and place in the fridge to cool.
- Use ⅓ of the egg mixture per sandwich. Try adding your favorite deli meats, cheeses or slices of avocado for added flavor and texture.
