RECIPE: Quick and Easy Miso Egg Sandwich

Yogurt adds a touch of tang while spicy chili shiitake miso gives the old favorite egg sandwich an exciting kick of umami and spice. 

Servings: 3


  • 6 eggs
  • 50ml water 
  • ¼ onion (chopped)
  • 7 Tbsp mayonnaise
  • 3 Tbsp plain unsweetened yogurt
  • 1 ½ Tbsp spicy chili shiitake miso*(or any other miso*)
  • 4 pinches of salt and pepper 
  • 6 slices of white sandwich bread


  1. Crack the eggs into a microwave-safe container and add water. Whisk to combine the egg yolks and whites. Cover with plastic wrap and microwave for ~4 mins at 600W. Then finely mash the cooked eggs with a masher or fork. 
  2. Add chopped onions, mayonnaise, yogurt, and spicy chili shiitake miso. Mix to combine and season with salt and pepper, adjusting to taste. Cover and place in the fridge to cool. 
  3. Use ⅓ of the egg mixture per sandwich. Try adding your favorite deli meats, cheeses or slices of avocado for added flavor and texture.
