Unlike the plums you may be used to, ume are the sour fruits that come from Japanese plum trees. Rather than sweetening as they age, ume actually become more sour! And if you've ever had an umeboshi (pickled plum) then you know how sour and salty they can be. These sun-dried umeboshi are a local speciality from Wakayama, produced using one of Japan's most prized plum varieties, the nanko ume. These special seedless umeboshi are made by removing the seeds after harvest and carefully drying them in the sun.
