Japan is home to over 40 different regional varieties of citrus fruits, but one is prized above all others: yuzu. From the outside, yuzu resembles a lemon with its bright yellow peel, but is larger and squatter. Its flavor is best described as a cross between a tart lemon, a sweet mandarin orange, and a fragrant grapefruit.
Our producer, Suki Tokusan, artfully stews yuzu peels in natural granulated sugar to add the right amount of sweetness to the tart, acidic notes of the yuzu peel. Compared to other candied yuzu peels, these Sour Yuzu Chips emphasize the sourness of the peel to achieve a balance between sweet and sour known as amazuppai.
Suki Tokusan was founded as a way to bolster the declining population of Suki, a small village in Miyazaki Prefecture located on Kyushu island. In order to revive the area and bring attention to its agricultural treasures, Suki Tokusan began specializing in locally grown produce, such as yuzu, and using them to create their own regional specialities.
