Frosted Yuzu Jam is made from just two ingredients: pesticide-free “Shimofuri Yuzu” (frosted yuzu) grown in Tokushima Prefecture and rock sugar made from sugar beets grown in Hokkaido. The yuzu is briefly blanched in boiling water to enhance its sweetness and remove bitterness. This “frosting” method, preserved from the Edo period, got its name because it frequently whitens or brightens the color of yuzu. Enjoy the smooth, paste-like texture of this jam with its sweet, tangy yuzu flavor.
