Kikurage (wood ear mushrooms) can be found growing wild in the woods around temples and monasteries in Japan. They have a distinctive appearance, and when cooked have a mild, earthy fragrance and a distinct firm, crunchy texture. Referred to as "mysterious medicine for immortality and longevity", kikurage contain more than 80% water and nutrients such vitamin D, calcium, iron, and dietary fiber.  

These Dried Kikurage from Niyodogawa Kikurage are harvested in the mountains of Shikoku Island, Japan’s smallest main islands. The mountains are at an altitude of 750m with a large different between day and nighttime temperatures, regulating in the thick and fresh texture of this kikurage. Our producer gets its name fromNiyodogawa (the Niyodo River) which is famous for the clarity of its waters. These kikurage are grown from the waters of Niyodogawa, without the use of pesticides or preservatives, as well as the surrounding natural fog which helps provide added moisturize. 

How to prepare: To rehydrate, soak in lukewarm water for 40-60 mins. For a faster alternative, rehydrate by boiling in water for 20-25 mins. Note that when you rehydrate the mushrooms they will increase approximately 10 times in volume.

Suggested use: To enjoy the natural taste and texture, simply dip in ponzu. Can also be thinly sliced and added to stir fries, soups or salads.
