Miso and mirin lees are the perfect marinade to add umami and flavor to grilled chicken. You can also substitute meat or fish instead of chicken and see how it enhances the flavors and softens the textures.
- 60g miso
- 30g Mirin Lees
- 300g chicken thighs
- Cooking oil
- Mix the miso and mirin lees and coat the surface of the chicken. Wrap in plastic wrap, and marinate in the fridge overnight.
- Gently wash off the marinade and fry both sides in a pan with cooking oil until cooked (be careful not to burn).
