MINIMALIST RECIPE: TERIYAKI CHICKEN

 

Teriyaki is a quintessential sweet and savory Japanese sauce that can easily be made by combining soy sauce and mirin in a 1:1 ratio. The quality of the soy sauce ensures the right balance of umami without being overly salty.

Ingredients

  • 130g chicken thigh
  • Dash of salt
  • Oil for cooking
  • 1 tbsp soy sauce
  • 1 tbsp mirin

Instructions ⅔ 

  1. Sprinkle the chicken with salt and fry in a pan until cooked. 
  2. Mix in the soy sauce and mirin. Heat over low until the alcohol evaporates from the mirin (just prior to boiling, roughly 1 min). Make sure the chicken is coated in the sauce and serve. 

 

OPTIONS 

  • Use sake combined with a bit of sugar instead of mirin. 
  • Combine with your favorite seasonal vegetables to make a stir fry.
