MINIMALIST RECIPE: BAKED MISO FISH

White fish provides the perfect base to showcase the rich salty, umami flavors of miso which is grilled/baked to create a slightly sweet, charcoal taste.

Prep time: Half a day   |   Cook time: 10 mins   |   Servings: 2

 

Ingredients

  • 2 slices of white fish
  • 2 tbsp miso
  • 2 tbsp sake
  • 1 tbsp mirin

Instructions

  1. Marinate the fish by combining all the ingredients to make a sauce and leaving it in the fridge for at least half a day.
  2. Grill, bake in an oven or fry in a pan (be careful not to burn the sauce).

 

OPTIONS

  • You can replace the mirin with sugar while increasing the amount of sake. 
  • Add yuzu zest or grated ginger to the sauce before marinating. 
  • Sprinkle with shichimi togarashi when serving.
  • Use as a topping for pasta or as a filling for onigiri (rice balls). 
  • Use pork or chicken instead of fish.
