RECIPE:Kan Koji Fried Chicken

Packed with added umami flavor thanks to the use of Kan Koji Paste, these bite-sized pieces of fried chicken have a crispy golden exterior while remaining tender and juicy.

 Ingredients:

Dipping Sauce (Optional)

Instructions:

  1. Gently pat chicken thighs with paper towel to remove excess moisture and cut into bite-sized pieces. Add to a resealable plastic bag with Kan Koji Paste, minced garlic, and minced ginger. Massage into the chicken pieces, remove air from the bag, seal well, and refrigerate overnight. 
  2. Remove the marinated chicken from the bag and evenly coat pieces with potato starch. 
  3. Heat frying oil in a pan over medium heat. Cook chicken pieces for 3 mins. Remove from oil and set aside for 3-4 mins to continue cooking with the residual heat. 
  4. Return chicken to the hot oil and cook for 30-40 sec or until cooked through and golden brown.
  5. For a quick and easy dipping sauce, combine Kan Koji Paste, vinegar, and chopped green onion in a small bowl and enjoy alongside your fried chicken!
