Transforming often bitter raw Japanese plums into these decadent sugar ume, our producer Up To You has created the perfect sweet and sour treat. Craftsmen carefully ferment locally grown Benisashi ume, known for their tart flavor and juicy texture, in sugar. Aging the ume for over 6 months gives them the perfect jammy texture, similar to that of a prune.
