Japanese plums, orume, are actually more closely related to apricots and are typically pickled to make sour pink umeboshi. Our producer, Up To You, has reinvented these delicious juicy plums by fermenting and preserving them using only sugar, and then aging them for over 6 months to create this sweet and sour treat.
Up To You uses a special variety of Japanese plum primarily grown in Fukui prefecture.Benisashi ume are prized for their tart flavor and juicy texture, thanks to their smaller pits, fleshier meat and exceptionally thin skin, making them the perfect plum for these Ume Glace.
