Mentaiko is a traditional Japanese cured food made from Alaskan pollock/cod roe and is typically a popular filling for onigiri and a great drinking snack, or ostumami. These roe sacks are cured with salt and marinted before being lightly smoked using sakura (cherry blossom) chips. The resulting mentaiko has a flavor that's reminiscent of the sea, without being overly fishy, and balances the perfect amount of umami and smokiness for an extra depth of flavor.
