Kokuto (Black Sugar) Kirazu Soy Bean Pulp Crackers
Producer: Otoufu Koubou Ishikawa
Prefecture: Aichi
Ingredients: Wheat flour (wheat (domestic)), raw sugar, vegetable oil (rapeseed oil), okara powder (soybean (domestic)), kokuto (black sugar), salt, leavening agent (baking soda)
Vegan, Dairy-free

A blend of sweet and salty, these delicious soybean crackers are homemade using 100% domestic soybeans and local flour from Aichi Prefecture. The mild sweetness of kokuto, a black sugar made from 100% sugar cane juice produced in Japan’s southernmost islands of Okinawa, which is known for its caramel and licorice flavor, is beautifully balanced by a touch of salt in these soybean crackers which are then gently fried in non-GMO rapeseed oil.

Sweet Potato Miso Chips
Producer: Kakukyu
Prefecture: Aichi
Ingredients: Sweet potato (domestic), vegetable oil, sugar, seasoned miso, salt, soy sauce, alcohol (may contain wheat and soy)
Vegan, Dairy-free

A unique blend of Kakukyu’s traditional liquid miso and potato chips creates a sweet miso flavor perfectly complemented with a dash of salt. These chips are made from Japanese “beni haruka” sweet potatoes using a traditional kettle-frying method, achieving a crisp and light texture. Known for their sweet richness, Japanese “beni haruka” sweet potatoes are dubbed “honey potatoes.” This sweetness is perfectly balanced by hatcho miso from Aichi prefecture. Hatcho miso is special compared to other types of miso because it undergoes a long fermentation process of about 24 to 30 months and is made of soybeans rather than rice. Compared to other types of miso, it is less sweet and has an intense, bold umami flavor.
