Seasonal Specialties #2 : Frosted Yuzu Jam / Uji Matcha Sweet Bean Jelly

(2 products included)

Frosted Yuzu Jam
Producer: Yuzurikko
Prefecture: Tokushima
Ingredients: Yuzu (Tokushima Prefecture), rock sugar (Hokkaido Prefecture)
Vegan, Gluten-free, Dairy-free, Soy-free

Frosted Yuzu Jam is made from just two ingredients: pesticide-free “Shimofuri Yuzu” (frosted yuzu) grown in Tokushima Prefecture and rock sugar made from sugar beets grown in Hokkaido. The yuzu is briefly blanched in boiling water to enhance its sweetness and remove bitterness. This “frosting” method, preserved from the Edo period, got its name because it frequently whitens or brightens the color of yuzu. Enjoy the smooth, paste-like texture of this jam with its sweet, tangy yuzu flavor.

Uji Matcha Yokan (Sweet Bean Jelly)
Producer: Natural Attorait
Prefecture: Kyoto
Ingredients: Beet sugar (Hokkaido Prefecture), white bean paste, starch syrup, agar, organic matcha (Kyoto Prefecture)
Vegan, Gluten-free, Dairy-free, Soy-free

Yokan, a firm jelly dessert, is one of Japan’s most popular types of wagashi (Japanese sweets). This bite-sized yokan is made in a local tea shop in Kyoto using only the finest ingredients. The matcha is a luxurious blend of organic Uji matcha grown in Wazuka-cho, Kyoto, a region famous for its green tea, and is carefully selected by tea masters to maximize the flavors. Beet sugar from Hokkaido, Japan’s northernmost main island, is also used for its mellow sweetness that brings out the astringent, bitter flavors and aroma of the matcha.
