Originally crafted to commemorate and celebrate Taihei's 125th anniversary, this special soy sauce was so popular that it is now offered as a limited edition release each year. Each bottle of Heizaemon soy sauce begins by combining domestically grown soybeans and wheat with sea salt from Nagasaki Prefecture in cedar barrels. The mixture is slowly fermented and aged for about a year, drawing out a mellow, traditional flavor that can't be replicated in modern factories. Collected by allowing the mixture to naturally drip, rather than being pressed, the time and effort put into production can be tasted in each delicious drop of soy sauce.
