Tsukemono (pickled things) are served alongside every meal in Japan and were originally made as a way of preserving local seasonal vegetables. This organic Ume Vinegar Pickled Ginger is made by infusing organic ginger and shiso with the refreshing floral flavors of organic ume and rice vinegars. The ginger provides a hint of spice while the shiso leaves create a deep pink-purple color and refreshing minty taste. The final result is a pickled ginger that is mellow in taste, especially when compared to Japan’s more common pickled ginger known as beni shouga.
