Beloved for its bright aroma and notes of mint, citrus, and cinnamon, red shiso adds a refreshing herbal flavor to any dish. Additionally, it’s commonly found lending its vivid red hue to things like umeboshi (pickled plums) and pickled ginger. Here, naturally grown organic red shiso is cured with sundried salt from Australian seawater and organic plum vinegar to mimic the taste of “momi shiso”, the shiso used to make umeboshi. These simple ingredients are combined using old-fashioned methods to create these flavorful flakes.
