Produced by one of the premier katsuobushi manufacturers in Japan, this special seasoning begins with a base of line-caught bonito locally sourced in Kagoshima. From there, the bonito undergoes a drying and aging process to concentrate its flavors before being thinly shaved into thin flakes. The flakes are then slow-cooked with traditionally brewed honjozo soy sauce and sugar to create a sweet and savory furikake.
