Instead of just steaming green tea leaves, houjicha is made by first steaming then roasting the leavesin aporcelain pot over charcoalat 200°C,resulting in a teawith a nutty, caramel-like flavor.The leaves have a distinct earthy color andthe tea is less bitter than other green teas. It has minimal caffeine making it a great choice even for children or before bed.
The process of making houjicha originated in Kyoto a century ago. Azuma Chaen cultivates high-grade Uji sencha on their farm without the use of pesticides, to create this soothing, roasted houjicha.
How to prepare: To brew 2 cups of houjicha, place 3 tbsp of tea leaves in a teapot with a strainer and add 200ml of boiling water. Brew for 30 secs and serve.
