Almost every Japanese home-cooked meal is served with a side of pickled vegetables, known as tsukemono, with each region having its own specialties based on its local seasonal vegetables. Here burdock, a Japanese root vegetable known as gobou, has been pickled in a flavorful sweet and sour pickling juice which can be reused to pickle your own vegetables!
