This seaweed salad (known as kaiso salad in Japanese) includes five different types of seaweed - funori, dulse, wakame, gagome kelp and ma-konbu ("true" kelp) - all sourced from the fishing village of Osatube located on the eastern coast of Hokkaido, Japan's northernmost main island. Surrounded by mineral-rich waters, Hokkaido produces some of Japan's best seaweed and here they're combined in a specific ratio that allows you to enjoy each seaweed's unique characteristics.
