Kakinotane is a popular type of rice cracker made from glutinous (mochi) rice and typically coated with soy sauce. TAC21 carefully selects domestically produced glutinous rice to make the dough for their crackers and seasons them with organic tamari soy sauce brewed in traditional wooden barrels. They then add powdered bonito (skipjack tuna), shiitake mushrooms, kelp from Hokkaido, and akamoku powder (a type of Japanese seaweed), for extra umami and a touch of sweetness. These thoughtful additions give TAC21's kakitone the perfect sweet and spicy umami taste.
