Using traditional methods passed down over generations, Matsuoka’s skilled producers grow their shiitake on kunugi (Japanese chestnut oak) logs, giving them a distinctive umami-rich, earthy flavor. After being picked, the mushrooms are sun-dried to further enhance their flavor.
