Recipe: Fresh & Fragrant Chicken Spring Rolls with Peanut Sauce

These light and vibrant spring rolls are sure to brighten your table and satisfy your taste buds! 

Crunchy fresh vegetables mingle with buttery avocado, fragrant herbs, and hearty grilled chicken in a delicate rice paper wrapping. Topped with our Spicy Umami Miso Furikake and dipped in a creamy peanut sauce, each bite is a delightful fresh experience.


Servings: 2


Ingredients:

● 4 sheets of rice paper

● 1-2 pc(s) ripe avocado, thinly sliced

● 120g (4 oz) chicken breast, grilled and thinly sliced

● 1 medium cucumber, shredded or julienned

● 1-2 leaves romaine lettuce, shredded

● 1 medium carrot, shredded or julienned

● ½ cup red cabbage, thinly shredded

● ¼ cup Spicy Umami Miso Furikake (for topping)

● ¼ cup roasted peanuts, chopped (for topping)

● Fresh cilantro or basil (optional)

● 8-12 cherry tomatoes, sliced (optional)


Easy Peanut Sauce (Optional) 

● ¼ cup peanut butter

● 1-2 tsp apple cider vinegar

● 1 Tbsp soy sauce

● 2 tsp oyster sauce

● 2 tsp maple syrup (to taste)

● Salt (to taste)

● Sweet chili sauce (to taste) (optional)


Instructions:


1. Soften a sheet of rice paper in a dish of cold water for 5-10 secs, then lay it flat on a cutting board.

2. Place avocado slices, chicken breast slices, shredded cucumber, shredded lettuce, shredded carrot, shredded red cabbage, and cilantro leaves in the center of the rice paper.

3. Gently fold over one side of the rice paper, fold in the edges, and gently roll to the other end of the rice paper as though you are wrapping a burrito. Repeat with the remaining rice paper and ingredients.

4. Cut in half or into bite-sized pieces and arrange the spring rolls on a plate. Garnish with Spicy Umami Miso Furikake and serve with either the easy peanut sauce recipe included or your favorite dipping sauce.


Easy Peanut Sauce Instructions:


1. Add the ingredients to a small bowl and whisk until smooth. 

2. Taste test the sauce and add additional maple syrup, salt, and chili sauce to suit your taste. If the sauce is too thick, add a small amount of warm water and mix. Serve alongside the spring rolls.
