DETAILS:
Candied Sour Yuzu Peels
| Producer: Suki Tokusan | Prefecture: Miyazaki | Ingredients: Yuzu peel, granulated sugar, citric acid, vitamin C Vegan, Gluten-free, Dairy-free, Soy-free | Size: 30g

Yuzu, Japan’s beloved citrus fruit, resembles a lemon with its bright yellow peel but has a delightful flavor best described as a cross between a tart lemon, a sweet mandarin orange, and a fragrant grapefruit. To make these candied sour yuzu peels, yuzu peels are artfully stewed in granulated sugar to balance the natural tartness.

Yatsuhashi Cinnamon Cookies | Producer: Aoyama Mameju | Prefecture: Kyoto | Ingredients: Sugar, rice flour, kinako (roasted ground soybeans), ground cinnamon, sesame (includes soy and sesame) Vegan, Gluten-free, Dairy-free | Size: 100g

Kyoto’s most popular souvenir, yatsuhashi are a type of cookie made from rice flour and sugar flavored with cinnamon. These yatsuhashi cookies also feature kinako (roasted soybean powder), which adds a sweet nutty flavor similar to peanut butter, and are shaped into an elegantly curved shape resembling a Japanese harp.

Sugar Ume (Japanese Plum) | Producer: Up To You | Prefecture: Fukui | Ingredients: Ume (Japanese plum), sugar Vegan, Gluten-free, Dairy-free, Soy-free | Size: 30g

Sour Japanese plums, known as ume, are transformed into a sweet treat by local craftsmen who carefully ferment locally-prized Benisashi ume and preserve them in sugar for over 6 months. The result is an artisanal sweet and sour treat.

Kawagoe Potato Yokan (Firm Jelly Cake) | Producer: Ajiyoshi Kobo | Prefecture: Saitama | Ingredients: Sugar (domestic), sweet potatoes (Saitama Prefecture), agar Vegan, Gluten-free, Dairy-free, Soy-free | Size: 50g

This yokan, traditional firm jelly cake, is uniquely made from imo (sweet potatoes), a specialty of Kawagoe City in Saitama, which have a natural sweetness and noticeable golden color.

Miso Candied Sweet Potato | Producer: Yamauchi Honten | Prefecture: Kumamoto | Ingredients: Sweet potato (Miyazaki and Kagoshima Prefecture), vegetable oil, sugar, miso (contains soybeans), butter Gluten-free | Size: 40g

This crunchy, sweet, treat combines satsumaimo (sweet potato) and “Maboroshi Miso” - a balanced, sophisticated miso crafted by experienced artisans. The sweet potatoes are fried until crispy and baked with a mix of butter, sugar, and maboroshi miso which adds rich umami.

Matcha Kinako (Roasted Soybean) Crunchy Candy | Producer: Marushima | Prefecture: Hiroshima | Ingredients: Sugar (sugar beet (Hokkaido)), organic soybean powder (contains soybean), malt syrup, rice oil, organic matcha Vegan, Dairy-free | Size: 80g

These traditional Japanese confections are made using 500-year-old Portuguese candy-making techniques, where Hokkaido beet sugar and malt syrup are boiled, aerated, and stretched to create a light, crispy texture. Organic Shizuoka matcha and roasted kinako flour deliver a mildly sweet, distinctly Japanese flavor profile. For over 60 years, Marushima has crafted "seriously delicious" plant-based foods using domestic ingredients and environmentally conscious practices.

Genmaicha (Brown Rice Green Tea) Candy | Producer: Iwai Seika | Prefecture: Kyoto | Ingredients: Granulated sugar, starch syrup, brown rice tea Vegan, Gluten-free, Dairy-free, Soy-free | Size: 100g

Genmaicha (lit. “brown rice tea”) is made from roasted brown rice that is combined in an equal ratio with earthy green tea. The brown rice adds a toasted nutty flavor, which is showcased in these hand-made candies.

Uji Matcha Sesame Cookie | Producer: Manten | Prefecture: Saga | Ingredients: Sesame, egg, sugar, flour, butter, matcha Soy-free | Size: 4 cookies

These handcrafted treats combine the bitter-sweet taste of high-quality Uji matcha with the subtle buttery flavor of sesame seeds. A touch of sugar amplifies the sesame’s natural nutty sweetness, perfectly balancing the mellow earthiness of the matcha. The resulting cookie has a crispy texture and vibrant green color.
