This vibrant and refreshing salt mikan carrot salad is a twist on the classic French side dish.
- Combine the grated carrot with a pinch of salt and squeeze to remove as much water as possible.
- Separately, dry roast the nuts in a frying pan then chop.
- Combine the grated carrot, roasted chopped nuts and salt mikan marinade. Cover with plastic wrap and let sit in the fridge for at least an hour before serving.
