RECIPE: Oven-Baked King Oyster Mushrooms with Yuzu Mayo

Bright, floral Honey Yuzu Peels add delightful citrus flavor to savory and sweet oyster sauce and creamy mayonnaise, turning tender king oyster mushrooms into a delicious and succulent oven-baked dish with sweetness, tang, and umami in every bite.

 

Servings: 3-4


Ingredients:

● 30g (~2 Tbsp) mayonnaise

● 20g (~1½ Tbsp) Honey Yuzu Peels*

● 1tsp oyster sauce*

● 2-3 large king oyster mushrooms

● 1 Tbsp neutral oil (vegetable, canola, etc.)

● Chives, finely chopped 

● Sea salt, to taste

● Black pepper, to taste 

● Chopped crispy bacon (optional topping)



Instructions:

1. Chop the Honey Yuzu Peels into small pieces and mix with the mayonnaise and oyster sauce.

2. Preheat the oven to 350°F (170°C).

3. Cut king oyster mushrooms into 1cm round slices. (Cut the top part vertically)

4. Place wax paper on a sheet pan and lightly oil it.

5. Add the prepared yuzu mayonnaise on top of the king oyster mushrooms and bake for ~10mins.

6. When the mayonnaise is lightly browned, it is ready to be served. Season with salt and pepper and garnish with finely chopped chives and crispy bacon bits.
