RECIPE: Japanese Zha Cai and Chive Omelet
Japanese zha cai (szechuan pickles) adds spicy, sour, and salty to this omelet which is cooked in the nutty flavors and aroma of sesame oil.

Ingredients:
- 3 eggs
- ¼ tsp salt
- 1 Tbsp sesame oil
- ½ package (50g) Japanese Zha Cai (Szechuan Pickles)*
- 1 bunch chives (cut into 3cm lengths)
Instructions:
- Beat the eggs with salt in a bowl.
- Separately, add the sesame oil and Japanese Zha Cai to a frying pan and stir-fry over low heat. When fragrant, add the chives and stir-fry. Add the egg mixture from step 1. Cook on both sides, flipping once.
