MINIMALIST RECIPE: AJI TAMAGO (SEASONED BOILED EGG)

 

Aji means flavor in Japanese and these seasoned eggs are a simple way to enjoy a satisfying Japanese snack.

Prep time: 6 hours after | Cook time: 5 mins | Servings: 2-3

  1. Boil and peel the eggs. 
  2. Separately, combine the water (or sake), soy sauce and mirin in a pan and heat over low until the alcohol evaporates from the mirin (and sake) (just prior to boiling, roughly 1 min). Remove from heat. 
  3. Combine the eggs with the sauce from step 2 in a sealable bag. Store in the fridge for about 6 hrs then enjoy.
