Japan is home to over 40 different varieties of citrus fruit, but one is prized above all others:yuzu (柚子). From the outside, yuzu resembles a lemon with its bright yellow peel. However, the fruit is larger and squatter with a flavor best described as a cross between a tart lemon, a sweet mandarin orange, and a fragrant grapefruit. The fruit itself is rarely eaten raw, instead everything from its zest to its flesh can be found lending its flavors to many of Japan’s favorite foods, including this yuzu zest from Oita Prefecture.
Affectionately known as the “Village of Yuzu”, Inai Town in Usa City in Oita Prefecture is surrounded by lush green mountains, beautiful clear streams and some of the Japan’s best yuzu. Kushino Farm cultives their yuzu using organic farming methods to produce this yuzuka (powdered yuzu zest) which is made entirely from carefully selected yuzu peels grown on their farm. The zest holds an abundance of the yuzu’s citrus flavors and natural oils, making this the perfect way to add the refreshing taste of yuzu to almost any food you can imagine!
Suggested uses:Sprinkle on everything from soups to salads, mains to desserts, sauces and even in cocktails. Can also be used to add flavor when pickling vegetables.
