These cookies (known as "yatsuhashi") are a traditional sweet and Kyoto's most popular souvenir ("omiyage"). Made from a combination of rice flour, cinnamon sugar and roasted soybean powder ("kinako"), they have a pleasing texture and wonderful nutty flavor. To make these cookies, the dough is rolled into an elegantly curved rectangle and baked until crisp, giving the cookies their signature shape resembling a Japanese harp ("koto").
