This award-winning vinegar was only available to the customers of an unassuming sushi restaurant on a shopping street near Kobe in Hyogo Prefecture. It's infused with smoky, umami-rich flavors of katsuobushi (dried, fermented, smoked bonito fish) and konbu (kelp), with a hint of sweetness that balances out the mild acidity of the vinegar.

Suggested Uses: Toss as is with fresh or grilled vegetables, or combine with a mild-tasting oil to create a light and refreshing dressing. Toss it with grilled eggplant, asparagus and cherry tomatoes then top with grated ginger and katsuobushi*. You can also use it to make pickles with cucumber or other vegetables or serve it with sashimi grade fish.
Substitutions: Use in place of rice wine, white, or even balsamic vinegar in your favorite dishes.
