Mentaiko is a traditional Japanese dish made from cured cod or pollock roe (fish eggs). It is a popular filling for onigiri or topping for rice, and it makes a great drinking snack (ostumami). This mentaiko is make with cod roe, which is salt-cured and marinted before being lightly smoked using sakura (cherry blossom) chips. The resulting dish has a flavor that will remind you of the sea, with perfectly balanced umami flavor.
