With a taste like Gouda cheese, this smoky and frangrant island tofu, known as shimadofu, has a firm yet moist texture. It's made by slowly aging tofu with koji (a fermenting microorganism) and smoking it with cherry wood chips. It's a local favorite from the southern tropical islands of Okinawa!
