These special hakuhou rakkyo (Japanese scallion) are grown deep in the soil of the Fukiagehama sand dune in Kagoshima - Japan's longest dune. The fibers are tightly packed, resulting in a crisp, crunchy texture. These pickles have a delightfully mild sweet, umami flavor, with red shiso (perilla leaves or Japanese basil) adding a bright purple hue and refreshing minty taste.
