This traditional treat has been a favorite in Yamagata for centuries. Combining secret techniques passed down through generations of craftsmen and the finest modern confection technology, Tamayaso Honten is keeping the tradition alive. Tree-ripened ume (plums) are crushed and simmered in a mixture of sugar, starch syrup, and agar, preserving their signature sweet and sour flavor and refreshing fragrance. The resulting mixture is spread into thin sheets, dried, sliced, and carefully wrapped in bamboo peels to preserve its clear amber color and unique springy texture.
