Made from three simple ingredients - steamed rice, water, and koji- kurozu, or Japanese black vinegar, is a prized product resulting from years of dedication and fermentation. In black ceramic pots known as tsubo, kurozu is slowly aged for up to 3 years, giving this unique viengar its signature deep, caramel color, and earthy aroma. It is milder in flavor than regular vinegar, making it the perfect base for this Black Vinegar Paste.
