Local legends in the Tsuruoka area say that the special “dadacha” variety of soybeans was a favorite snack of a young prince in the Shonai clan. He ate them every day, asking his father (“dadacha” in the Shonai dialect) where the beans were from. They have since become a favorite snack for generations of Tsuruoka children. Once grown by the indigenous population, today these beans are found and grown only in Tsuruoka. Freshly harvested dadacha beans are peeled, seasoned with a dash of salt, and quickly freeze-dried to preserve their unique sweetness and aroma.
