This artisan dashi is all you need to make authentic Japanese food at home! Individually packaged in convenient tea bag-type packs, this staple soup stock can be prepared in mere minutes, while the ingredients have been thoughtfully sourced to produce a clean, umami-rich flavorful broth. 

The bonito flakes come from Yaizu City in Shizuoka Prefecture, one of Japan’s leading port cities. Their specialty is “honkarebushi”, the highest grade of smoked and fermented skipjack tuna that has been cultured and sun-dried in cycles for about six months. The aging process deepens the umami flavor, reduces fishiness, and breaks down the fat content making for the perfect clear amber dashi that highlights the delicate flavors of your dishes without overwhelming them. 

Konbu (kelp) from Hokkaido Prefecture, sardines from the Kyushu region of Japan, and shitake mushrooms from Izu, Shizuoka Prefecture are all dried and mixed into the dashi powder to add a depth of umami flavor and amplify that of the bonito flakes. Additionally, Yaizu arabushi, another type of bonito that has not been cultured, is blended into the mix as it offers a stronger aromatic flavor.

Suggested uses: How to make basic dashi: Add one pack of dashi to 400ml of water and bring to a boil, simmer over low heat for about 2 minutes, and then the dashi is ready for use. For a stronger dashi, use two dashi packs in 500ml of water. Please be careful of boiling water when removing the dashi pack. Since the dashi doesn’t contain any preservatives we recommend using it within the same day. However, it can be frozen (up to 3 weeks) to preserve. Try freezing leftover dashi in an ice cube tray for easy-to-use small portions! This prepared dashi is great for making traditional Japanese dishes like takomi gohan, dashi maki tamago, miso soup, chawan mushi, and more! Additionally, the contents of the dashi packet can also be used as seasoning.
