Created in 2008, Tajima Brewery was born in the spirit of community by giving new life to a closed elementary school. They use traditional methods to create this pure rice vinegar made from a unique “natural stork” rice - rice grown in harmony with the delicate local environment inhabited by beautiful Japanese storks.
