Made famous in Japan, indigo goes by the name of "Japanese blue" and has been used in Japan for centuries, not only as a fabric dye but also as a medicinal herb.

In a quiet village overlooking a picturesque blue ocean in Nagasaki Prefecture, Atelier Aiakane cultivates different local seasonal crops, but is best known for its indigo plants. Indigo stalks and leaves, and depending on the time of harvest, roots, seeds and flowers, are harvested, washed and dried in the sun every morning. It’s then packed by hand with butterfly-pea flowers, resulting in a floral, calming, vibrant blue color when steeped.

How to prepare:Place one tea bag in a cup (preferably clear) and add boiling water. Steep until it produces a vibrant blue color. The color changes depending on the pH level of substances added to it. Adding lemon juice turns it to a violet purple while adding fuchsia roselle hibiscus leaves will turn it to a bright red. Enjoy on its own, add honey to sweeten, use it in cocktails or freeze it into ice cubes and watch it change the color of drinks as it melts!

Suggested uses: Pairs great with the artisanal snacks and sweets found in ourJapanese Snacks & Sweets: "Raku" Care Package.
