Shio konbu is loaded with amino acids that bring out the umami and sweetness in good tomatoes. Tossed with a little olive oil and a pinch of salt and you have an easy delicious side dish in a matter of seconds.
- 3-4 small vine-ripened tomatoes
- 1 tablespoon olive oil
- 4 grams (0.15 oz) shio konbu, about 2 packed tablespoons
- Salt , to taste
- Cut the tomatoes into bite-sized wedges and put them in a bowl. Drizzle with the olive oil and sprinkle with shio konbu to taste.
