RECIPE: Cobb Salad With Miso Yogurt Dressing
Vegetable dashi miso adds a touch of umami and Japanese flavors to this light and refreshing cobb salad.
Servings: 3-4
Ingredients:
- 1 small cucumber
- 2 leaves of lettuce
- 6-8 cherry tomatoes
- 1 avocado
- 2 eggs (boiled)
- 170g cooked chicken
- 2 Tbsp Vegetable Dashi Miso
- 2 Tbsp vinegar
- 1 Tbsp olive oil
- 80ml plain yogurt
- Pinch of salt
- Coarsely ground black pepper to taste
Instructions:
- Peel the cucumber. Cut into quarters vertically then chop into 1cm pieces, Chop the lettuce, cherry tomatoes, avocado, boiled eggs and cooked chicken into 1.5 cm pieces.
- Separately, mix the vegetable dashi miso, vinegar, olive oil, yogurt and a dash of salt.
- Arrange [1] on a plate and pour [2] on top. Add pepper to taste.
