Gyokuro (玉露, lit jade dew) is considered to be amongst the highest grades of green tea in Japan and is known for its dark green color and strong umami flavor. To make Gyokuro, green tea leaves are shaded from sunlight at least 20 days prior to harvesting with straw mats. This allows for increased caffeine and amino acid levels which result in a sweeter and stronger flavor which never overpower each other - you can learn more about Gyokuro Green Tea here.
