地芥(日语:ちかし,罗马字:Jigarashi)是福井县特有的芥菜。与不含芥菜籽油的普通芥菜不同,地芥包含整颗芥菜籽,包括籽油和外壳。其制作工艺自明治时代以来从未改变,一直沿用至今。地芥混合了棕色和黄色的芥菜籽,味道比普通日本芥菜更甜、更浓郁、更香、更辛辣,并略带苦味。这里,它与鲜味浓郁、陈酿9个月的味噌完美融合。

This product was a surprise in flavor profile. You can use it anywhere you might use a spicy honey mustard (sandwiches, scotch eggs, chicken tenders) but also you could easily sub out some Dijon mustard and use this instead. So for dressings, marinades and that ilk. You could also sub it for course ground mustard as well. The sweet might initially be a surprise, but it grows on you when the flavor profile blooms as you eat it. If you have sugar in a recipe you are using, use some caution and taste before you add your sugar to whatever you are making so you don't get too much sweetness.
Definitely a winner of a product. Too bad it doesn't come in larger sizes!
