Soba, which is the Japanese name for buckwheat, is one of the most popular types of noodles in Japan. This soba noodle is made from 100% buckwheat. It is gluten-free and flash-frozen to maintain its moisture. Notoriously tricky to make, a master noodle maker achives optimal texture by adjusting the dough according to humidity levels and the variety and grind of the buckwheat. Made without pesticides or chemical fertilizers and grown and milled in-house, this is the truest form of soba you can enjoy!

Suggested Uses: Cook the whole package of noodles for 7 minutes in 3-4 litres of water. Please wait 30 seconds before separating and stirring the noodles as they cook as they will be delicate. Drain and serve with a dipping sauce of dashi and soy sauce.
You can try using these noodles in many dishes such as soups, stir-fries and salads, or in spring rolls for added texture.
The leftover boiled soba water is commonly saved and enjoyed in Japan as a comforting, warm drink.
Substitutions: You can use soba noodle as a substitite for various noodles and grains such as ramen or Udon noodles, egg noodles or rice. In some cases, you may need to adjust the flavourings to complement the earthier taste of the soba.
